2 Kale Soups & Raspberry Vanilla Cupcakes

Kale is highly nutritious filled with antioxidants and is also an anti-inflammatory food. So when I notice we haven't been having enough greens in our diet I turn to kale. There is a ton of ways you can make it and I have been trying some of the recipes I have found online out. Here is the first two I tried this time. I will have more to come though. In the past I have also posted about Kale & Potato Soup & Kale and Potato Enchiladas. 

Sausage and Kale Soup
This is one recipe I loved from the Martha Stewart Website. She has a whole list of kale recipes and this has been my favorite. 
 Here are my simple & quick changes I made to make it vegan. So Simple.


  • 1 tablespoon olive oil

  • 1 onion, diced

  • 2 garlic cloves, minced

  • 1/4 teaspoon crushed red-pepper flakes

  • 5 potatoes (1 1/2 pounds), peeled and cut into 1/2-inch chunks

  • 1 1/2 Boxes of No Chicken Broth By Imagine or Veg stock of your choice

  • 1 Bunch kale (12 ounces), stemmed and shredded

  • 1 Package Light Life Veggies Sausage, Pre-Cooked before you add it to the soup. You could use Tofurky sausage as well.

    This was also from the Martha Stewart Website. It turned out ok. But It wasn't one of my faves.
    It would be a good soup when your sick. It kinda reminds me of a "chicken" soup type soup. But with an extra boost of Nutrition!!! So I will have it next time I get sick... But with some added pasta. The left overs I used as pasta topping :)


    The Changes I made to this soup recipe was that I used No chick broth by Imagine and No Parm Cheese. Oyeah and I forgot to buy bread, so no bread...

    Homemade Raspberry Sauce for the Cupcakes. This sauce reminds me of the sauce that is in those Non Vegan  swirl cakes in the cookie section of stores. It was so good and I had a lot left over. So I have been adding it to
    I used this recipe for Strawberry filling minus the soy milk. When it was cooked down quite I bit I started adding powdered sugar to the raspberries because they are more sour/bitter then strawberries and take alot more sugar. So I just kept adding extra heaping tsps of Powdered sugar till it was a good taste for me. Probably atleast 8 heaping tsp.

    1 cup butter, room temperature
    6-8 cups sifted powdered sugar
    2 teaspoons vanilla
    1/4 cup light vanilla soy milk
    Vanilla Cupcakes from The Joy of Vegan Baking. With some Fudge icing and shredded chocolate.

    These are the same vanilla cupcakes from The Joy of Vegan baking with the Raspberry Glaze under the icing. With Raspberry Vanilla "Butter" Creme. John and I Loved these! I added a little to much "Butter" to the frosting so it kept melting... oops. But it was so good. I used two tubs of Premaid vegan icing and then added 2 sticks of Vegan butter. It was really good but wouldn't hold shape.  Plus I added some Raspberry sauce to the frosting. Next time I will drizzle the raspberry sauce over the cupcakes to make them super cute! And fill them.

    Redo of Rock Soup w/ Pecans and Cheesy Crescents


    Rock Soup, I make it a hundred times and a hundred different ways a year but this way was so great I had to talk about it.. and give the new recipe.

    Pecans go so well with this soup. I was so surprised but its an awesome way to get some extra nutrients and some more yummy flavor. Even if you have never used nuts in soups, rice, etc. just because you think you wouldn't like it... try them they are awesome and are sometimes the cherry on the cake...  :)
    Rock soup
    All the flavors melded together so nicely that this was the best Rock Soup I have ever made.
    2 Tbsp Olive oil
    1 onion, chopped
    1 large sweet potato, peeled & chopped
    5 to 7 carrots, peeled & chopped
    4 stalks celery, chopped
    3 medium potatoes, peeled, chopped
    3 Garlic cloves, grated into soup
    2 Bay leaves
    2 heaping tsp smoked paprika
    1 15oz can Chick peas/ Garbanzo beans, drained
    1 15oz can Pinto beans, drained
    1 15oz can Kidney/ or red beans, drained
    1 cup corn- I added half a frozen bag
    1 cup peas- I added half a frozen bag
    Broccoli- I just dumped in the who bag
    1 28ox can diced tomatoes
    8 cups No chicken broth by Imagine, 2 Boxes
    1 Tbsp Chipotle Hot sauce
    1 Tbsp Hot sauce
    1 Cup Pecans or pecans to your liking

    Try to use a Big, heavy cast iron or hard anodized pot. This recipe makes alot. 

    Heat pot with Olive oil in it. Add all the chopped veggies, garlic, bay, and paprika. Let this cook for 10 to 12 minutes or until the onions are translucent and veggies are starting to cook down. Add the frozen and canned veggies, broth, & hot sauce. Simmer for 20 minutes or until carrots & potatoes are tender but not falling apart.

    Spin into bowl and add pecans to top. I add a good amount like 1/4 a cup maybe a little more.  I really love the pecans in this.

    Cheesy Crescents
    These are such a great appetizer but they will go fast!
    Can of vegan crescents
    Daiya vegan cheese
    Tomato sauce or marinara of choice

    These are super fast and easy and come out tasting awesome!

    Simply role a small amount of daiya up into the crescent and then bake a directed. Warm to tomato sauce and serve. We have these with soup and other dishes sometimes as well. But they are yummy by them selves. We had these with our rock soup one night.

    Vegan MOFO Day 8: "Chik N Soup" & Cooked Apple Sauce

    Well today John stayed home from work with the tummy flu... It was really bad. So of course we follow the "BRAT" diet when our tummies are not feeling well. Bananas, Rice, Applesauce, & Toast. So I made him some "chik N soup" and homemade quick cooked apples turned into apple sauce. Both extremely simple. To simple to even call them recipes. So I will just give the instructions. The soup I know isn't really on the list but I figured a little white pasta and broth wouldn't hurt.

    Chik N soup

    2 boxes No chicken broth made by Imagine
    1 box organic white ABC pasta
    5 to 8 organic carrots, diced very small
    Water

    I dice the carrots very small then boil them till tinder in water. Broth boils down really fast and is expensive so I use the water for the carrots. Then I put the carrots into the broth, bring it to a boil, then add the ABC noodles and follow the pasta instructions till al dente.

    Cooked apples

    Can be eaten as chunked cooked apples as my family did when I was young or blended into apple sauce like I did for John.

    1 large or 1 1/2 small apples per person
    water

    I cover the bottom of the pot in about an inch of water put the apples in and then just wait till they are nice, tender, and sweet. It will take like 15 minutes. You can add anything you want but I just left it plain.

    Vegan Lunch Box- Chili Con "Carne"

    My Long day!

    I had a long day yesterday. Up at 4am drive into work with John to pick up our car from his job. Went to Walmart to kill some time because I needed Dog food and the pet store didn't open till 10am. Had subway at 7am. Its in our Walmart. Spent Almost $8 at Walmart in 2 hours. lol.. Then went to Target about 20 minutes away. Got there at 8:30am. Spent about $15 on kitchen stuff they had on sale. Then went to Krogers and 9:30am and spent about $4. Wow right.... In 3 hours time I spent including Subway $31. Not bad right. Finally I go to the Pet store at about 15 till 10 only to find out that I have been wasting time for nothing because that have been open since 9am.... I wanted to scream! Wow. So then I can back to Fairmont and John was working and wanting to have lunch. He didn't know I had ate at Subway.. Shoooooo.... :) So he wanted Taco Bell. Which I don't normally do. So I went and got a Plain Bean Burrito & he had 3 Fresco Bean Burrito and and two cups of water. O'yeah I forgot to mention I swear off Soda yesterday. Haven't been feeling good and have had sinus drainage and it gets worse when I drink my beloved Diet Caffeine Free Pepsi. So. I was drinking water all day. After we ate I came home. Did have much time to waste though. We keep Roxie in the bathroom when we are not home. I got ready to leave again. I was going to Chey's Schools Christmas Party. School has been cancelled so many times because of the snow that they just not had it. So I went up there for about 2 hours. Then finally came home. Then I started on the Chili Con "Carne". It was about 4:00pm. I sauteed the onions. Couldn't find the frozen bell peppers so I skipped them. Boiled 5 cups of water. Chopped up 2 tomatoes (Not in the recipe). And put everything in the pot. Luckily I had measured everything out except the water the night before. I was so tired by 4:30pm. I don't work good on 2 hours of sleep. Anyways. Then I flopped down no the couch. Ate a bowl of cereal. Watched a couple tv showed that had taped on the DVR and then fell asleep 5 minutes short of the 3 show ending. Oops. :) So i slept for about an hour on and off till John got home a little after 8pm. The Chili smelled great. So we had chili at about 9pm.

    This recipe is simple to make and easy to throw everything together and leave it in your crock pot. I wasn't sure about the spice blend. I am a little picky about my chili. Growing up I always had the pre-seasoned canned beans mixed with kidney beans, and with a packet of Chili seasoning added. So I really like it that way. For the most part that is how I cook it. I mean I add veggies, etc to it. But, other wise its store bought.

    The texture to this chili is really nice. I really like the TVP in it. I have never cooked with TVP because I just wasn't sure how to cook with it. This recipe showed me that it is simple and I will definitely cook with it more often. It gave a great texture to the chili. I normally only have beans and veg in my chili. But for now on I will add TVP. But back to the herbs. It calls for Thyme, Sage, & Oregano. Measuring the spices the night prier I knew that the one herb was really fragrant compared to the others. But I decided that was the recipe so I am going to make it that way. I think it is the Oregano. It is really pungent to me. To over powering to the other spices in the chili. You could definitely smell it over everything while it was cooking. But when I took the first bite I could tell it was just to much for me. so I added another tsp and a half of paprika and a half tsp of cumin. That didn't really help it. The oregano was still very strong. I made a bowl. Added some more paprika, smart balance light, and crackers. ate a couple bites and them gave it to John. He said it was pretty good. He ate my bowl and another bowl.

    I tried it again this morning. After the flavors had more time to meld together. Its a little less pungent this morning but still a little to strong, Oregano wise, for me to eat. I think I will make this again. Well I am going to mix up the herbs & spices a little bit But I am going to make something similar in the future.

    The Crockpot + 2 Simple Soups

    I bought a Crockpot on Black Friday and I have to say I really like it. I won't say love. Because I think I like things a certain way. Like I wish it would heat a full pot to boiling or simmer quicker. If you want that to happen a Crockpot is not a good way to cook. But if you have at least 6 to 8 hours on high then its great. Plus with the longer cooking time on low heat the flavors have more time to come together. So in alot of recipes slow cooking is a great way. Plus heating it slowly and not simmering or boiling the entire cook time helps to hold in some of the vitamins that high levels of heat can destroy.

    So here are 2 meals that I have tried. All are very simple & quick to throw together. But all take atleast 4 to 8 hours of cooking time in the Crock. I also throw in the quick instructions. You can also go to my other Blog and they are listed as individual entries for easier finding & printing. Plus I have been entering recipes & photos there long before I come and enter them here.     Crock Pot Chili or A Quick Chili

    Crock Pot Chili - 5 QT

    3- 15oz Cans Chili Beans w/ liquid
    2- 15oz Cans Chili Beans w/ liquid
    2- 15oz Cans Mixed Beans w/ liquid
    6 Carrots, Chopped
    4 Stocks Celery, Chopped
    2 -28oz cans Chopped Tomatoes (1 w/ liquid & 1 w/o)
    2 Simply Organic Mild Chili Packets
    1 Tbsp Chili powder
    Paprika- Optional to taste

    Put all the ingredients in the crock pot and set on High for 4 to 6 hours. Its done as soon as the carrots & celery ate tender & the flavors have combined.


    Quick Pot chili

    Same ingredients but add 1 onion. and 1/2 a small can or tomato paste.

    Place chopped carrots, celery, & onion into pot w/ a small amount of oil. Cook till tender. About 10 minutes. Add Tomato paste and cook for about 2 minutes. Then add all the other ingredients. Let cook on stove at a simmer for about 30 min- to 1 hour. Just long enough for the seasoning to grow and share its flavor. Then you are ready to eat!

    Chili is even better the 2nd day. The flavors have time to come together some more and the sauce thickens a little more. It is so good!


    • You can also add pasta, rice, quinoa, barley, etc.If you do this make sure you don't let it cook for to long after wards.
    • Kale & other hearty green would be good to wilt in at the end as well.
    • You can also turn left overs into pot pie!
    • You can also pot ground flax in this recipe for some Omega-3
    • Or you could add some Vegetable puree like sweet potato or chunks of sweet potato to add to the nutrient spectrum.

    Smoky Barley & Veggies - 4 ways, Crock Pot, Speedy, Bake, Pie

    Crock Pot Smoky Barley & Veg Soup

    This is almost basically a "rock" soup. Meaning you just throw in everything you have. This is a basic recipe. You can add or take out any of the veggies or barley. Add A little more paprika if you want a little more flavor. This will fit tight in a 5qt Crock pot.

    Ingredients

    1 Tbsp Oil
    6 Carrots, Chopped
    4 Celery, Chopped
    1 Onion, Chopped
    4 Cloves Garlic
    3 Potatoes, Chopped
    1 Cup Corn, frozen or Canned
    3 Cans Beans, Drained (I use Kidney & Black beans)
    1 Cans Chopped Tomatoes
    6 Cups Veg Broth
    2 Bay Leaves
    2 Tsp Paprika
    1 Tbsp Hot sauce ( add an extra if you like it hot, I use the smoky Tabasco)
    3/4 Cup Pearled Barley
    Salt & pepper to taste

    You could also fold Kale into this soup.

    Cook covered.

    Heat Crock pot for 15 or 20 minutes. Put oil in bottom of Crock pot. Chop up all veggies and put them in the crock pot with the oil, paprika, corn, garlic, & bay leaves. Mix up well. Then add the drained beans Tomatoes, Veg Broth, & Hot sauce. Let cook on High for 4 to 6 hours. Add the barley 15 minutes before you are getting ready to eat. But even if you leave it cook longer the barley will hold up pretty good. Add salt & pepper to taste.

    Quick Stove top Fix

    Heat pot on stove. Add oil. Add all veg, garlic, paprika, & bay leaves. Let cook till veggies are tender. like 15 minutes. Add Everything else including the barley. Cook covered. Let simmer for 20 to 30 minutes.

    All Done!

    I like to take toasted bread & let it soak up some of the broth. It is very yummy!

    Bake/ Pot Pie/ or Shepards Pie
    You can also turn this into a cake. Follow instructions as listed above. Except just let veggies start to get tender. Don't let them get totally tender. You can add the barley or not. It you add the barley. Add an extra 3/4 Cup. Let in soak up all the liquid.. Put in oven and cook for 30 minutes to 1 hour. Check doneness of veggies to know when it can come out. About 10 to 15 minutes before it comes out of the oven add the vegan cheese (such as daiya). Let it melt and slightly brown. Then it is ready.

    • You could also cook it like the pot pie below. Have everything done and stick in oven just to melt the cheese. But this won't caramelize the tomatoes and cheese on the sides. And that crunchy top is yummy.

    • You could also put biscuits on top to bake.

    • Or Mashed Potatoes like a Shepard's pie! Add a little Boca crumbles or other crumbled vegan meats.

    Pot Pie
    You could also turn this into a pie. Don't add all the broth & barley if you are going to do this. Only use like 2 to 3 cups broth. Cook till veggies are done. If the broth hasn't cooked down and thickened from the potato starch add some oil & flour mixture. Heat the oil like 20 sec in microwave. For every Tbsp of oil add a tbsp of flour. For every cup of liquid you want to thicken add 1 tbsp each. After this thickens put into pie crust. With a bottom and top crust. And bake till crust is browning.

    • If you are topping with crust, bread, or potatoes it is a good idea to take out the barley so that there are not as many carbs in the meal.

    White bean chili & Oatmeal Cookies

    A few days ago I found a new wed Site Called Sparkpeople.com. It is a "dieting" website that does a lot of cool stuff. You can track your calories and activities. You can read tons of informational articles and do tons of more stuff. Anyways. I have been tracking my calories, fat, protein, & carbs on there web site. And working with some of there meal plans. But since you can enter in your own food options I kinds stray but stay in my calorie realm. The other day I made there White bean chili recipe which turned out to be really good. But its not chili to me. It has some spices like chili but its just more like a white bean soup. Very easy and good.

    Other recipes. The only other thing I am going to post a picture of are no bake cookies. They are easy and quick. Everyone knows what the are. Lots of fat, high in calories & carbs, but has a good amount of protein.

    1/4 Cup cocoa
    1/2 Cup soy milk
    1 tsp Vanilla extract
    2 Cups Sugar
    1/2 Cup Vegan Marg ( I use smart balance light)
    1/2 Cup Peanut butter ( You can use 1 whole cup though I like them better w/ a whole cup)
    3 cups oats.

    Put everything except oats and peanut butter in pan. Bring to boil. Let boil for 5 minutes. Take off heat add peanut butter mix well. Add oats and then put on cookie sheet to harden enough to pick up. Enjoy.

    I also have a corn flake no bake cookie recipe that I will post one day. They are really good too.

    I finally received my new juicer in the mail. But I have not taken it out of the box to use it yet. I can't wait but my kitchen is a disaster. Breville Ikon Juicer here I come. Very soon. I will post a review and recipes soon. I hope.

    Next on my list. I have mentioned that I have an addiction to books in the past but now its to buying them off ebay, half.com, and amazons used section. I have purchased 9 or 10 in the last 2 week. Its crazy.....
    My garden is dieing. the summer is coming to a close. Which I really don't mind at all. But my garden is being attacked by zucchini bugs. And bugs just freak me out. Yuck. So I am very sad to say although I am still getting tomatoes everything else has pretty much died. But its kinda our faults. It hasn't rained and I have yet to get J to help me carry out counters of water.
    I know this is every where today. Sorry. Maybe it will be better next time.

    Soup

    I made a soup today. I love soup its easy to make and it good especially on a cold day. I was watching Racheal Ray this morning and seen this soup called "Rock soup" and decided I would make something like it. So here is my recipe for the day.

    Veggie Soup of the Day
    Potatoes ( a couple depending on the size and how much you like potatoes)
    3 Carrots
    5 Celery Stalks
    2 Gloves Garlic
    1 or 2 White onions diced
    1 Can Chick peas
    1 Can diced Tomatoes
    Paprika ( Palm full) For a smoky flavor ( I didn't have enough :( )
    Hot sauce to taste (I used chipolte)
    1 Box of No- Chik Broth
    Olive oil
    Croutons of Crusty bread to make croutons.
    *I also had veggie smoked Boca sausage in it. But I didn't like it. So I would skip it if I was you.

    Put a couple Tablespoons Olive in in pan and warm. Chop the Potatoes, Onions, Celery, & Carrots through in the pot. Put the paprika, garlic and hot sauce and let the veggies cook down some. (Any others veggies you want fill free to throw in. Its all up to what you like.) After the veggies have cooked down put the Can of Chick peas, Tomatoes, and the No- Chik broth. Let it boil till the veggies are soft and you are ready to eat. Add the croutons and it makes it kind of creamy. I like creamy soups better. But this one was pretty good. I also like the crunch of the croutons so I keep some for the top. Enjoy....

    Croutons


    These are my first homemade croutons. Something so easy has taken me forever to try to make. These were pretty good. I am not a person for spices. (They gap me, Don't ask me why.) But other wise they we good. Italian bread with Olive oil & Italian seasoning. I love restaurant croutons but the ones you buy at the store are just not the same.

    An Old Favorite Updated- Chik-N Noodle Soup

    Chik-N Noodle Soup (A Simple Recipe)
    1/2 Bag No- Egg Wide Noodles (They are hard to find in my area, But I did find some at a discount store)
    5 Cups Mckays Chicken Style Broth powder (Vegan style Chik Broth)
    1 Can Sliced Carrots
    Corn Starch (Enough to thicken)
    1/4 Cup soy milk
    1 T Margarine
    Salt & Pepper to taste

    Makes enough for 2 or 3 bowls

    I make this different all the time but this was my try at it this week. Normally I don't thicken it. But my husband likes thick chik-n noodle soup. It turned out pretty good. I should have made more. It could use a little something but not sure what. O well It was still good. Sometimes for my "J" tastes I add little bits of Morningstar Farms or Quorn Chik-n style pieces to make it a little more like what he was used to. I also sometimes add peas & corn. But I like the carrots best.
